Kaiser Mélange

Specialty coffee recipes

This Kaiser Mélange Austrian recipe combines the egg yolk with the coffee, which is also a popular blend in the Scandinavian countries. The honey-sweetened egg yolk provides a sensual texture to our espresso. The added brandy can then elevate the experience to another level.

Kaiser Mélange is a traditional Austrian coffee specialty that combines the richness of espresso with the luxurious texture of a honey-infused raw egg yolk, finished with a touch of cognac or brandy.

This exquisite coffee blend, known as the “Emperor’s Melange,” offers a unique and indulgent experience that captures the essence of Viennese coffee culture. While the Kaiser Mélange may not be commonly ordered in Viennese coffeehouses today due to regulations concerning raw egg yolk, its historical significance and rich taste make it a delightful choice for those seeking a taste of traditional Austrian coffee craftsmanship.
